Tallis hails from Merrickville Ontario, where his pursuit of all things culinary began at the age of sixteen. After attending culinary arts at Le Cordon Bleu, Tallis was offered a job at Nobu, in London, UK. While in London, Tallis received the opportunity to work with chefs Jason Atherton (Gordon Ramsay’s Maze & Pollen Street social), Anthony Demetre (Arbutus), Fergus Henderson (St. Johns) and Hamish Brown (Roka). In 2012 Tallis was brought on as Executive Chef of Paintbox Bistro and Catering, here in Toronto to over a 180 seat restaurant and café, along with a full scale catering company.
In 2014 Tallis opened Small Town Food Co., a 42 seat restaurant in the heart of Toronto’s Parkdale where Tallis was able to hone his skills in Modern Canadian Cuisine. Tallis’ newest project is Providore Catering, a full scale catering company serving the Greater Toronto Area. He leads the Providore kitchen team as executive chef and partner. The food at Providore is a reflection of Tallis experience; taking the best of what Canada has to offer.
